We've changed our specials for the weekend and there's some great value to be had.
First off we have Spanish Pomegranates at 3 for €1. Never had a pomegranate? They're pretty amazing. The seeds are surrounded by a juicy pulp so when you eat the seeds they explode in your mouth and then give you a little crunch at the end. They're full of flavour as well and can be juiced, but I love them in a salad. A really easy one is rocket, pomegranate, crumbled feta, a squeeze of lemon, balsamic vinegar and olive oil. Great as a side with some fish or a light lunch.
Next up we have 8 Cox's Apples for €1. Bargain. Enough said.
Then we have 500g pack of Parsnips for €1. I mentioned in our "Whats good this month" post that you can make chips out of them. Really simple and much healthier than regular chips. Peel and slice the parsnips into 1 cm chips. Parboil for a couple of minutes. Allow to cool while heating the oven to 200. Once they've cooled a bit, coat them in a bit of olive oil, salt and pepper and roast in the oven for 20 minutes or so. Lovely.
